Rustic Biltong Potato Salad

Another one of my favourite recipes with a small South African twist. I find that Biltong can really enhance any salad. It adds an extra dimension in its texture and unique flavour, and provides a great amount of protein.

100g South African Shop Original Sliced Biltong
750g new potatoes
3 tbsp mayonnaise
4 tbsp plain yoghurt
2 tsp mustard
1 shallot (finely chopped)
1 garlic glove (crushed)
2 spring onions (roughly chopped)
1 small bunch coriander (roughly chopped)
Salt and pepper to taste
Small pinch paprika (optional)

1. Chop up the new potatoes into equal size chunks (for a healthier version, leave the skins on). Put them in a pan of boiling water. When the water has returned to boil, cook for a further 10 minutes, or until just cooked.

2. While the potatoes are cooking, mix the mayonnaise, yoghurt, mustard, chopped shallots, spring onions and garlic together.

3. Drain the potatoes and while they are still warm, cover with the dressing. Gently toss so that all the potatoes are coated. Sprinkle on the 100g of Biltong and mix.

4. Season with salt, pepper and paprika. Garnish with coriander and serve.
